Newport Welcomes Derby Themed Distillery and Eatery

Pensive Distilling Co, a new distillery and restaurant in Newport, takes its name from the horse that won both the Kentucky Derby and the Preakness Stakes in 1944. On their website, the owners note that “pensive” is also the mood one may take when sipping spirits.


The Derby theme carries throughout the establishment’s full food menu and cocktail offerings with dishes such as “Brokers Tip,” a dish of bourbon-glazed shrimp and grits named for the 1933 Derby winner and their mint julep offering “Authentic” named for the 2020 winner.

The co-owners are Scott Quigley and Jose Escamilla. Pensive takes over the site where 27 Bar+Kitchen was located, at 720 Monmouth, that was also owned by Quigley. He brought in co-owner and general manager Escamilla, who moved here from Los Angeles. The pair have a history of distilling together.

Right now they are waiting for their first bourbon to age and so are specializing in vodka and providing bourbon contracted from another Kentucky distillery. For more, check them out at pensivedistilling.com or see “Pensive Distilling Co.” on Facebook.
